Frozen Chocolate Mousse

So today I opened my freezer only to discover some chocolate mousse that I had forgotten from yesterday.  It was now  frozen, but it turned out to be a great treat on a hot, hot day!   I topped it off with some creamy chocolate ganache and chocolate shavings. Yummy!

Here is a simple recipe for chocolate mousse

9 oz. bittersweet or semi-sweet  chocolate
1/4 cup coffee liqueur or rum
2 tablespoons vegetable oil
2 teaspoons vanilla extract
1 1/4 cups heavy cream

Method:

  1. Melt chocolate over a water bath. Remove from heat and add liqueur, oil and vanilla. Stir to combine. Then cool to room temperature.
  2. Whip heavy cream in bowl until soft peaks form. Gently fold whipped cream into chocolate mixture.
  3. Pipe or spoon mousse into shot glasses, ramekin or your favourite dessert bowl.
  4. Freeze for 3 hours or overnight
Have it for supper tonight!
