So today I opened my freezer only to discover some chocolate mousse that I had forgotten from yesterday. It was now frozen, but it turned out to be a great treat on a hot, hot day! I topped it off with some creamy chocolate ganache and chocolate shavings. Yummy!
Here is a simple recipe for chocolate mousse
9 oz. bittersweet or semi-sweet chocolate
1/4 cup coffee liqueur or rum
2 tablespoons vegetable oil
2 teaspoons vanilla extract
1 1/4 cups heavy cream
- Melt chocolate over a water bath. Remove from heat and add liqueur, oil and vanilla. Stir to combine. Then cool to room temperature.
- Whip heavy cream in bowl until soft peaks form. Gently fold whipped cream into chocolate mixture.
- Pipe or spoon mousse into shot glasses, ramekin or your favourite dessert bowl.
- Freeze for 3 hours or overnight
