Homemade Ice Cream Sandwiches

The summer heat is on!  Keep your  cool with these yummy home made ice cream sandwiches.

You will need a batch of chocolate chips cookies and store bought ice cream of course. See recipe below for cookies. We will do ice cream in another post.

You should get about 20 cookies from the batch for a total of ten sandwiches.

Once cookies are baked and cool, lay 10 cookies out on a tray with the bottom side up. Using an ice cream scoop or large tablespoon, place a scoop of  ice cream on to each cookie and then cover with another cookie right side up.

You can leave them plain or roll the sandwiches  in sprinkles, chocolate, chopped nut,  dried fruit, gummy bears – you name it!  Freeze them for an hour or so until they firm up.

Include the kids and make this a fun family project!



2 ¼ Cups Flour

1 tsp baking soda

1 tsp salt

1 cup butter

¾ cup granulated sugar

¾ cup brown sugar

1 tsp vanilla

2 eggs

1 ¾ cup chocolate chips

  1. Preheat oven to 375 degrees
  2. Combine flour, soda and salt in bowl
  3. Beat butter, sugar, and vanilla in a mixer until creamy
  4. Add eggs one at a time
  5. Gradually beat in flour mixture
  6. Stir in chips
  7. Drop teaspoons of dough on the baking sheet
  8. Bake for 10 minutes
